From what I've read, "jelly roll" is a sexual reference (a sexual move of sorts).. I'm not aware of any true definition or explanation from Morton himself.

I love rhis!! My father, Frank Melrose,(deceased since 41) was a piano player in the 30's and 40's, He and Jelly were good friends,,my dad's playing reflects of lot of influence from Morton. Great pianists, both of them!!!
Jelly Roll Morton is my idol. I mean when people ask me who I want to be like when I grow up I say who else but good ol' Jelly Roll! I have had all of the Jelly Roll Morton action figures ever since I was a little roll myself, and to this day I admit I am still very proud of my collection. JELLY ROLL IS MY LIFE!
In addition to being one of the most celebrated composers and piano players in New Orleans history, this man was a pimp, a pool shark, a con artist, and a comedian. His braggadocios rhymes preceded hip hop by nearly a hundred years. I recomend Mr Jelly Lord as a good example of this. Also the songs windin boy, and make me a pallet on the floor are good lyrical examples of some of the dirtier songs played in new orleans around the early 1900s which also show similarities to hip hop today. The call and response in some of the mardi gras indian tunes he would perform would also be prevalent in new orleans rap later in the century. This dude is New Orleans Jazz and Hip Hop ROYALTY.
